Crispy Garlic Roasted Potatoes

These crispy roasted potatoes are the perfect side dish for any meal. The secret to their crunch is a quick par-boil before roasting.
Ingredients
- 1kg baby potatoes or Yukon Gold potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, smashed
- 1 tsp dried rosemary or 1 sprig fresh rosemary
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 220°C (425°F).
- Place the halved potatoes in a large pot of salted water and bring to a boil. Simmer for 8-10 minutes until slightly tender but not falling apart.
- Drain the potatoes and let them steam dry for a few minutes. Give them a gentle shake in the pot to roughen up the edges.
- On a large baking sheet, toss the potatoes with olive oil, smashed garlic, rosemary, salt, and pepper.
- Spread them out in a single layer and roast for 25-30 minutes, turning once halfway through, until golden and crispy.
- Remove from the oven, garnish with fresh parsley, and serve hot.
